Today I'm going to share a super simple Butternut Squash Soup recipe with you guys. It's a quick, easy, and healthy lunch time filler that will be sure to give you the energy you need to get you through the rest of the day. Butternut Squash soup is so delicious, you'll love it. 

All you have to do is: 

  • Chop an onion, a butternut squash, a potato, and 2 or 3 cloves of garlic. 
  • Heat some olive oil in a saucepan over a low heat and cook the onions for a minute or two.
  • Add the squash and potatoes and cook for 5 minutes over a medium heat. 
  • Add the garlic and some chili flakes for a little kick. Also, add some salt and pepper to your liking. 
  • Pour in 1L of water and a vegetable stock cube.
  • Simmer for about 25 minutes. 
  • Blend it all together until it is smooth and, well... soupy!

This is my favorite soup to make because it is so simple and it tastes so good. It'll keep you warm and cosy on the inside!
